I have just purchased a copy of Veeam Reporter for VMware. It is a very good tool for documenting your ESX setup, storage, LUNs, HA and VMotion setup.
Basically gives you the output of your config in a Visio diagram, PDF, word doc, Excel spreadsheet and more.
If anyone is wanting to document their VMware setup I couldn't recommend this product higher.
Note: Hope that didn't sound like a sales pitch.
